In addition to roasting pigs, these units are multi-purpose and can grill your chicken, roast your corn and potatoes, cook your hamburgers, and barbecue your steaks.
Approximate hog roasting capacities are as follows:
- 48″ for a 60 pound dressed pig with head
- 60″ for a 125 pound dressed pig with head
- cook approximately 40 leg quarters (60 lbs. total)
- 72″ for a 200 pound dressed pig with head
Sizes are estimates and if you roast without a head, you can roast a bigger pig.
Roast hogs at 350 degrees Fahrenheit until the shoulder meat reaches an internal temperature of 160 degrees as tested with a meat thermometer. An 80 pound pig will take approximately 7 hours at 325-350 degrees using 80 pounds of quality charcoal. If you cook the pork to a higher temperature, it will be easier to pick.
Lighting Operation Tips
To light your charcoal, pile up charcoal in bottom of roaster and light. Let it heat for 45 minutes until most of the briquettes are gray. Then spread the charcoal out evenly over the bottom of the roaster. A small shovel will work well for this.
Open the drafts on both ends and let the roaster heat up to 375 – 400 degrees. Then close the drafts back to half open to help moderate the temperature to approximately 350. If you dampen the drafts down and close them up, you can cool the fire down to approximately 275 degrees.
Remember: More air equals hotter fire. Less air equals a cooler fire.
